High in fibre, folate, and silicon — and a good source of plant-based protein for a green vegetable.

A good French bean should snap cleanly — that's how you know it's fresh and tender. Ours are young, stringless, and picked at the right moment. Steam them just-until-bright green for a salade niçoise, stir-fry them South Indian style with coconut and mustard seeds, or sauté with garlic and almonds for something unreasonably simple and good.
