A good tomato is the difference between an okay dal and an unforgettable one. Ours ripen on the vine (not in a warehouse under fluorescent lights), which is why they arrive blushing crimson and smelling like summer. Full-bodied, mildly sweet, beautifully tangy — everything a tomato should be and rarely is. Sauté them, roast them, blitz them into a weeknight shorba, or eat them warm off the windowsill with a pinch of salt.
