Before imported hybrids took over the fridge, there was Kakdi — the long, slender, quietly sweet Indian cucumber that powered generations of Indian summers. It's softer, juicier, and more hydrating than its glossier cousins. Our Desi Kakdi is harvested young so the seeds stay barely-there and the flesh stays silk-smooth. Slice it thin with black salt and a squeeze of lime, and you'll understand why your dadi always had one on her kitchen counter.
