Kundru (also called tendli, tindora, or ivy gourd) is the kind of vegetable that you don't miss until you have it again. Small, crunchy, slightly firm — it stir-fries beautifully, pickles wonderfully, and turns into a genuinely excellent Maharashtrian or Andhra fry curry. Ours are firm, glossy, and just the right shade of green.
